Hellooooo, hot stuff.

I love making breakfast easier for my (big) family. I’d love to buy out of convenience, and get some of those boxed breakfast microwave-and-done kind-of things from the store, but my conscience gets the better of me. Not only can I make it myself, and make it way better, I can do it at a fraction of the cost. And? If you time if just right, you’re not adding much more work to prepare it in advance.

homemade bacon egg and cheese biscuit sandwichesLast night, while preparing a big breakfast for dinner (eggs, pancakes, hashbrowns, sausage, bacon, etc.), I scrambled up four extra eggs with 1/4 cup of milk, poured them evenly into a six-muffin heart-shaped pan (but any muffin pan will do), and baked them in the oven alongside biscuits. It barely added any extra work on my part to over-prepare more breakfast fixins to make our mornings move a little smoother.

I made the biscuits with a bit more liquid than it normally calls for, just so that it would spread out, more like a cookie, and be a better sandwich (in my opinion). Less crumbly. This way, I could sandwich them together, too. I made twelve of these “biscuit cookies” to make six sandwiches.

Once all ingredients were cooled to room temperature, using sliced cheese on a biscuit, I broke a piece of turkey bacon in half, criss-crossing it on top of the cheese, adding the heart-shaped egg, and finally the top biscuit. Wa-la! Easy-peasy and ready to go!

I wrapped each in cellophane, and placed ‘em in the freezer. The kids can pop out as they please, heat in the microwave for about a minute (or so, give or take), and have a homemade hot breakfast anytime.

TIP: The trick to heat breakfast sandwiches and wraps in the microwave is to sandwich them between two small bread plates, on flipped upside-down on top, so they heat thoroughly without drying out.

Aren’t they adorable? Even those heart-shaped eggs would look gorgeous on a morning breakfast plate with a couple slices of bacon, and a pancake or two, right? Maybe for Valentine’s Day? Or Mother’s Day? (Ahem.)

Peanut butter fudge + Ritz Peanut Butter Sandwich Crackers = HOLY DESSERT TO DIE FOR, BATMAN!

Holy smacks, friends! I finally did it! I finally didn’t screw this one up! I finally got the chocolate fudge to the right consistency (by adding peanut butter) and I did the (seemingly) impossible!

(And if you choose to make this, you are going to LOVE me for doing it!)

Behold, dessert of wonder! I bow to you in all your peanut buttery awesomeness!

Peanut Butter Chocolate Fudge Covered Ritz Sandwich Crackers

Get ready to go shopping, here’s what you’ll need.

  • 36 peanut butter Ritz sandwich crackers
  • 1-2 heaping tablespoons of peanut butter
  • 1.5 cups of chocolate chips (approximately half a 32oz bag)
  • 1 tsp vanilla
  • 3 tsp butter
  • parchment paper

Directions:

  1. Set up a double boiler (a microwave isn’t going to cut it) and put water on to boil. (I, personally, don’t have a double boiler, so I used a metal bowl that sat over a pot of boiling water. It worked perfectly, I just needed an oven mitt to hold the bowl.)
  2. Melt all the ingredients into the bowl, stirring until smooth. While holding carefully (and bravely, you tend to burn yourself a little, but it’s worth it), hold the crackers into the melted chocolate, swirl around a little, and place on parchment paper on a plate to cool/set. Repeat until all crackers are covered in awesome and you’re stomach is grumbling.
  3. Here comes the hard part – you have to let them cool. (I know, I know, you want to snarf on ‘em all right now, I know. But you can’t.) Once cooled, place in the fridge so that the chocolate hardens enough to remove from the parchment paper. (SWEET TORTURE, I know, but after 15 minutes, you’ll be good. You can do it, you can hold out for it.)

Are your fifteen torturous minutes over with? Are you ready? Seriously ready for it? The salt and sweet and crunch and OH MY SWEET BABY JESUS LAYIN’ IN A MANGER, it is goooooooood.

It’s (possibly/more-than-likely) Baby Week here, and our menu reflects a laid-back, easy-going menu – one that’s easy for kids to take over, or grandma to fix on the fly, or dad to throw together just in case mom’s a-huffin’ and puffin’. It’s also an easy week because it’s a full week of soccer, with first games starting this weekend (oy).

That is, if our family gets to feeling better.

Our second-grader, Super M, just returned to school today, after being down-and-out with a fever/cough and heightened asthmatic symptoms. Baby Sis is in the thick of having this ‘gunk’ right now, too, having just begun the fever portion of it, and Baby Dude went to bed with a slight cough, only to wake with an even worse one this morning. With Baby Dude and his inability to know how to cover his cough, the whole house will probably have it by week’s end. Sigh.

“Mooooooooom!” he calls to me, coming towards me, only to hack his germs all over my shirt and arm. Double sigh.

Whatever this illness is, it took out a good portion of my second-grader’s class before making it’s way through our family, and it really wants to spoil the excitement of Baby Week here in the Douglas household. And potentially drive momma Douglas into hysteria with worry over how this will all play out, giving birth with sick kids at home, and how mom can take care of everyone without getting it herself. Triple sigh.

So, easy meals it is this week.

Dinners this week include:

Chicken Paninis (which we had last night) a la Robin Miller’s cookbook. We hadn’t had it in a while, and were sad to find the store didn’t carry the necessary miso paste needed, so we made it with a peanut paste. TOTAL YUM!

Beef Tacos - we always try to have at least one mexican meal a week, and we haven’t had beef tacos in a while (we usually substitute for ground turkey). We have some beef left in our deep freezer, so we decided to go with it.

Baked Macaroni and Cheese – Ohhh, yes. One of the kids’ favorite meals. Figured this one would go over REAL well if mom (ahem, me) is in the hospital with the new baby.

Beef Stroganoff - My oldest wanted this on the menu this week. This will be for when mom is NOT in labor, but yet, it’s still easy to make.

Lunches will be hard to say this week – the older, non-sick ones will have their school lunches, while the sickies at home will be trying to mend on lots of chicken soup, grilled cheese, toast and other things that help kids feel better.

Breakfasts this week will include egg sandwiches, chocolate chip pancakes, and a new recipe I tried, Peanut Butter Chocolate Chip Crescent Rolls. I’ll share that with you this week, as I’m still experimenting on how best to make it tasty.
