On a large cutting board with a sharp knife, chop your fresh broccoli into bite-sized pieces and place it into a large bowl.
Prepare your bacon in the frying pan, let it cool to the touch, and then dice it into small pieces.
Add the chopped bacon to the broccoli bowl.
Add your shredded cheese, sesame seeds, mayo, and sugar to the bowl one after the next.
If you want to add red onions (again, optional), add them at this point.
Season generously, then mix gently together. Taste to test seasoning and season more if needed.
Cover and place your broccoli salad bowl into the fridge for - at minimum - an hour before serving. More than an hour is optimal, though. Served chilled and cooled is the best way to serve this!
