Final Preparation before serving
Once your chicken is cooked thoroughly, remove one breast at a time to shred. I prefer to shred using my Blendtec but you can use a hand mixer or two forks, whichever you'd like!
While shredding the chicken, drain most of the liquid from your pot using a colander, reserving some in a bowl in case it's needed again later.
Once all your chicken breasts are shredded, return them to the pot and blend well with the onions and peppers remaining.
Add your cream cheese to the chicken mixture and mix well.
As you mix the cream cheese chicken mixture, if you find the chicken mixture seems like it might need a bit more liquid to make it easier to blend, this is where you might want to add back in some of the broth we set aside!
Add your remaining taco seasoning packet and mix well, then add other seasonings and taste test to determine how much more of the spices are needed. Continue to stir well and season accordingly.
Serve with your favorite taco fixings and tortilla chips and enjoy!
