Ingredients
1
cup
almond milk
¾
cup
butter
melted and cooled
2
large
eggs
½
cup
dark brown sugar
packed
1 ½
cups
white whole wheat flour
¾
cup
large rolled oats
1
tbsp
baking powder
½
tsp
ground cinnamon
¼
tsp
ground nutmeg
Pinch
salt
1 ½
cups
frozen mixed berries
+ extra for topping
Instructions
Preheat oven to 350 degrees F.
Line your
muffin pan
with
paper muffin liners
or
reusable silicone liners
sprayed with
cooking spray
and set aside.
In a
large bowl
,
whisk
together
almond milk
,
butter
,
eggs
and
dark brown sugar
. After mixing until well-combined, set this mixture aside.
In a
smaller bowl
, sift into the bowl your
wheat flour
and mix it your
rolled oats
.
Add to the flour and oatmeal your
baking powder
,
salt
,
cinnamon
, and
nutmeg
.
Mix together the dry ingredients until everything is blended together well.
Slowly add dry ingredients into wet ingredients and mix thoroughly.
Once muffin batter takes form, fold in 1½ cups
frozen berries
.
Fill up each lined section of the muffin tin with muffin batter, filling it up about 2/3 of the way.
Top each muffin cup with an additional 2-3 frozen berries before baking.
Bake for approx. 20 minutes or until a
toothpick
comes out clean when inserted in the center of a muffin.
Allow your freshly baked muffins to cool for 10 minutes on a
wire cooling rack
before serving. Enjoy!
