Instructions
Cut up potatoes and put them on to boil and cook until fork tender.
Microwave your mixed vegetables until hot (about 8 or so minutes).
While they’re both cooking, spray your pie plate and add your pie crust.
Layer the heated vegetables first, season to taste next, then top with the barbecue pulled pork on top.
Drain your potatoes, add a few pats of butter to start, to coat the potatoes, then add about 1/4 cup of milk, seasonings to taste, and 1/4 cup of sour cream.
Blend with an electric mixer until it’s as creamy as possible. (Taste and reseason as needed, adding more butter, milk, and sour cream to achieve perfect creaminess as well as taste.)
Using an offset spatula, put mashed potatoes over the pulled pork carefully, creating a flat surface.
Place mashed potatoes into a cookie decorator/press and “frost” the mashed potatoes into a design (we used the flower tip), starting with the outside and working your way in. Make sure every part of the top of the pie should be covered in mashed potatoes!
Bake in your preheated 350 degree oven for about 20 or so minutes until you hear sizzling and the potatoes are nice and golden brown.
Let cool for about 10 minutes before serving. Enjoy!
