Pulled Pork Pot Pie
We have our favorite, best pulled pork recipe and it makes a TON of pulled pork for dinner, but because it makes so much, we have a ton of leftovers. We’ve made barbecue pulled pork nachos with it before (which are EXCELLENT), but we decided to try it this way, too. Behold – Barbecue Pulled Pork Pot Pie. Man, am I so glad we did!
Easy Pulled Pork Pot Pie Recipe
This is one of the easiest pot pie recipes you’re going to find out there because it uses leftovers! Yeah, baby! I’m all about repurposing dinners to make something else (especially when it’s as delicious as this pulled pork is). In this case, other than microwaving the vegetables to cook beforehand, and fancying up the potatoes using a cookie decorator, assembling this pot pie is easy and baking is a snap! Just got to cook until heated through, and you’re ready in no time!
Pulled Pork Pot Pie with Mashed Potato Topping
The potatoes themselves are easy to whip up, too! We use the same recipe we have always used when making mashed potatoes. Milk, butter, sour cream, seasonings. That’s it!
How to Make Pulled Pork Pot Pie
To make this awesome pulled pork pot pie recipe, you will need:
- pulled pork (you can use this pulled pork recipe if you want to make it homemade)
- mixed vegetables
- refrigerated pie crust
- potatoes
- milk
- butter
- sour cream
- seasonings (we use fresh ground salt and pepper, onion and garlic powder)
Put your cut up potatoes onto boil and cook until fork tender. Microwave your vegetables until hot (about 8 or so minutes). While they’re both cooking, spray your pie plate and add your pie crust. Layer the heated vegetables first, season to taste next, then top with the pulled pork on top.
Drain your potatoes, add a few pats of butter to start off and stir to coat the potatoes completely. Add seasonings to taste plus milk and sour cream and blend with an electric mixer until it’s as creamy as possible. Blend with an electric mixer until it’s as creamy as possible. (Taste and reseason as needed, adding more butter, milk, and sour cream to achieve perfect creaminess as well as taste.) Using an offset spatula, put mashed potatoes over the pulled pork carefully, creating a flat surface. Place mashed potatoes into a cookie decorator/press and “frost” the mashed potatoes into a design (we used the flower tip), starting with the outside and working your way in.
Every part of the top of the pie should be covered in mashed potatoes!
Bake in your preheated 350 degree oven for about 20 or so minutes until you hear sizzling and the potatoes are nice and golden brown. This is what it looks like before it goes into the oven..

Ingredients
- pulled pork from this recipe if you wish
- mixed vegetables

- 8 medium-sized red potatoes washed, cubed, skin left on (if you wish)
- milk
- butter
- sour cream
- seasonings we use fresh ground salt and pepper, onion and garlic powder
