I’ve tried other variations on the DIY Pumpkin Latte (from Starbucks) but I hadn’t found that winning combination of pumpkin, spice, and sweetness yet. Deciding to experiment for myself, with my good ‘ol coffee buddy Truvia, I came up with what I think is a pretty spectacular latte, if I do say so myself.
DIY Sugar-Free Pumpkin Latte
(Makes 1 huge cup, or two smaller tea-sized cups)
1 1/2 cups skim milk (or for an even tastier latte, use vanilla soymilk)
1/2 cup of instant espresso or 1/2 cup strongly brewed coffee (or, for a real jolt, add 1tsp instant espresso to your 1/2 cup of coffee)
3 tbsp canned pumpkin (unsweetened)
2.5 tsp Truvia
1/2 tsp pumpkin pie spice (or use a cinnamon/nutmeg mixture)
1 tsp cinnamon (yes, more!)
1/2 tsp vanilla extract
Combine all ingredients into a small saucepan, and whisk together as it heats up. Once it comes to a boil, reduce heat and let simmer for a bit. (I’m one of those folks who likes this a little thicker than normal, so I like to render off some of the water from the milk/coffee.) Take it off the heat and cool a little before serving. Serve with whipped cream or foam (if you have access to those).
I love seeing the thickness of this coffee drink swirling around my cup, feeling it resist against the spoon, watching the spices dance. It’s how I feel when I inhale drink it.
