Chocolate Almond Thumbprint Cookies
The second I opened up this thumbprint cookie recipe, I was immediately transported back to my childhood with my mom. These were one of my most favoritest things to make! Of course, I’ve progressed from using my own thumb for thumbprint cookies and now use a rounded teaspoon scoop (which makes it look much more uniform), but this basic shortbread cookie recipe to make these delightfully light chocolate almond thumbprint cookies , I mean you just can’t get any better than this!
Chocolate Almond Thumbprint Cookies Recipe
Buttery sweet, light in flavor. Butter butter butter I like to sing in my head when I make these. Not because it has a lot of butter or anything more-so than other cookies, but because when paired with the chocolate and almond, it really accents the butter flavor! I can taste it easily, and they complement each other so well!
Easy Chocolate Almond Thumbprint Cookies
This is an easy recipe to make for the holidays, but the beauty part is that it isn’t too holiday-esque to make for other occasions, too. Cookie exchanges, guests over, perhaps for tea? Oh, these pair really well with either tea or coffee! The light flakiness of the cookie pairs well with tea as the coffee accentuates the chocolate. You need this recipe in your life!
Simple Chocolate Almond Thumbprint Cookies
Some people like to bake these shortbread cookies with almond extract when using almonds in the thumbprint, but I believe heartily in using vanilla extract instead. I want that vanilla flavor to pair with the chocolate, you know? Vanilla, chocolate, almond, all blended together in one singularly fantastic bite. Yes! You already have the hearty almond crunch on top, you know?

How to Make Chocolate Almond Thumbprint Cookies
To make these fantastic Chocolate Almond Thumbprint Cookies, you will need the following:

Line a cookie sheet with parchment paper and set aside. In a medium-sized bowl, sift together your dry ingredients: flour and salt.
Using an electric mixer , beat butter and sugar. Once creamy, add egg and vanilla extract. Slowly add dry ingredients into the wet ingredients. Beat until cookie dough is formed.
Roll dough into 1 inch balls and place on lined baking sheet, about two inches apart from one another. Use a rounded teaspoon scoop to indent the center of each cookie. Place in freezer for about 30 minutes and preheat your oven to 350 degrees F. Bake for 13 to 15 minutes and allow to cool on a wire rack . Using a tablespoon, press on each indent just to make them deeper and larger.
Melt chocolate chips and swirl a little chocolate into each indentation on each cookie. Top with one almond.
