Candy Corn Peanut Butter Cookies

Peanut butter cookies remind me of being a child. Did you ever make thumbprint cookies with your mom? Peanut butter deliciousness in a cookie form and you get to depress your thumb in the center, and then finish it off after baking and cooling with a spoonful of jelly. It was such a treat and they always looked so spectacular to me! This peanut butter cookie recipe is almost exactly the same as my mom’s, except for the fun additions of candy corn and caramel chips. I tell ya, friends, these Candy Corn Peanut Butter Cookies are LEGIT and so good, you won’t want to give ’em up!

Tips to Make Candy Corn Peanut Butter Cookies

  • This recipe calls for “softened butter” but we don’t mean melty. We mean beginning to soften, but almost room temperature. This makes it easier to mix but butter that’s too softened makes a flatter cookie, and you want something with substance.
  • When you add the flour, baking soda, and other dry ingredients, sift them to make it easier to blend. Be sure to add your dry ingredients in stages, it helps to ensure your batter is mixed well.
  • Mix your wet ingredients together and wait to add your egg at the end, it helps to emulsify within the fat of the butter.
  • Always add your chips and candy of any kinds by hand and hand stir it gently to ensure they aren’t crushed and your batter doesn’t become overmixed.
