Tales from My Outdoorsy, Dirt-Filled Childhood

Seeing the gigantic unopened ten-pound bag of potatoes was enough for me to crave a nice, bitey potato salad. As I washed, peeled and marveled at the size of some of these monsters from the fresh sack, the smell of soil and earth infiltrated my nostrils. I couldn’t help but close my eyes at the sink, instantly transported to being an eight-year-old little girl.

I practically lived outside as a child. The dirt I’m sure I collected on my clothing and under my fingernails painted quite the picture of an outdoors-lovin’, awkward, gangly tomboy who loved running and performing cartwheels to and fro. I can still see the neighbor children with whom I’d bike-ride with every day, or the ones who’d play “red-light, green-light” with me, or would collect rocks and draw with chalk, and dig trenches and snow-forts and play hide-and-go-seek.

As long as the sun was up, I was outside basking in it.
If there was a tree with branches low enough, I’d be climbing that tree, or setting up forts against it.
If there were leaves on the ground, I was raking them to fall into a pile, or creating shapes with them.
I walked barefoot on the ground because there was no such thing as a ‘biting ant’ in New York.
I lived for the soil under my toes, the smell of mint in my mother’s grass.
I would lay on the ground, looking up the sun and clouds and find shapes for hours.

I particularly remember a world where it was uncomplicated to be a kid, especially outdoors. A world where we were expected to be outside always, never needing pressure or incentive to get there; a world where the games never ended, and the air smelled like sweet freedom, didn’t it? So much fresher, and oh so deliriously enticing.

There are days as a parent where I wish I could fold myself up into an envelope and mail myself back into time, back into those days, just to smell my momma’s grass and garden again, and lay on that cool lawn in the sun and stare at the clouds with not a worry in the world. I wish I could take my children with me, even for a few moments, to experience that childhood bliss with me.

It leaves me to wonder: in this technological age, what will our society’s children growing up today long to remember when they get older? What part of their childhood will they wish to mail themselves back to experience? Will it be to succumb to the sweet smells of friends, and dirt under their nails after a day well spent in the fresh air like me? Will it be to splash around in that mud puddle and wash grass out of their hair that night?

I certainly hope that’s what my children will long for.

Easy Homemade Beef Stroganoff Recipe

When we were coming up with what to eat this week, we wanted to eat something a little different, something easy but tasty. Beef Stroganoff was one of those recipes you grew up with as a kid, and immediately both my husband and I knew we had a winner on our hands.

I adapted Paula Deen’s Beef Stroganoff recipe and changed it, making it my own, particularly since I don’t use canned cream of mushroom soup, and also, because our family is large and more steak and beef broth were needed to make this “properly.”

The best part about this recipe is, you can have little helpers “help” you cut up the mushrooms, since they are so soft and pliable to begin with. My daughter used a not-sharp “kid’s” knife to slice the mushrooms into my Tupperware Quick Chef Pro slicer.

Easy Homemade Beef Stroganoff Recipe

INGREDIENTS:

  • 2 pounds cubed round steak, cut into thin strips
  • Mrs Dash table blend, garlic powder, onion powder
  • All-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, minced
  • 8 ounces fresh mushrooms, minced (we used less)
  • 1 (28-ounce) box Swanson All-Natural beef broth (will be used in soup below)
  • Creamed soup (see below for recipe)
  • Salt and black pepper
  • 1 cup sour cream
  • Cooked egg noodles (we used two packages)

Creamed Soup Recipe

  • 3 heaping tbsp butter
  • 4 tbsp flour
  • 1 cup beef broth (from box above)
  • 1 cup of milk
  • seasoning to taste

DIRECTIONS:

  1. Slice your onions and mushrooms (with a little help, if desired). 
  2. On a covered skillet or large frying pan (with a cover), add the olive oil and butter, and brown the steak whole on both sides for a couple minutes each. (This seals in the juices and makes the beef cook tenderly.)
  3. Remove from skillet, slice steak into strips and season with seasonings, and then toss the steak in a bowl with flour until completely coated.
  4. While slicing the steak into strips, add the onion slices and mushrooms to the pan drippings and saute until onion is tender.
  5. For the Cream Soup: In a small sauce pan by melting the butter. Once butter is melted, add the flour, and whisk until blended well and small beads form. Add broth and milk, whisk again, letting simmer until it thickens up. Add seasoning to taste.
  6. Sprinkle the onion and mushrooms with a tablespoon of flour, then placed the floured steak back into the pan with the prepared cream soup and 1 cup of beef broth. Season again.
  7. Stir then cover, cooking over low heat for about 30 minutes.
  8. Every ten minutes or so, add more beef broth, mixing into the thickened gravy mixture, thinning it out a little, and add a dash more seasoning. Should use the remaining broth in the box by the end of the simmering time, to make it more gravy-like.
  9. Once 15 minutes has passed since steak mixture began simmering, begin preparing egg noodles. 
  10. Once stroganoff is finished, stir in the sour cream right before you serve, and blend well. Serve over drained and cooked egg noodles.

It made me happy that there were *actual* mushrooms and onions in this dish, and they were cut so small and sauteed so well, the kids had no idea, and ate it all. Yay for hidden veggies!

My kids lost their minds over this dish. My son wants this for his birthday meal next week. My oldest actually said that this trumps my lasagna, which has not only been her favorite since she was little, has been on her “birthday menu” for years and years. TRUMPS MY LASAGNA! Dude! For this Italian born and raised momma, that’s huge!

I’m guessing they really, really, REALLY liked it.

5 Tips to Throw an Awesome Halloween Party (Post Sponsored by Kmart)

My husband leaves this Sunday to go away for two weeks, and will miss spending Halloween with us. We decided not to let this news get us down, so we threw our own Halloween party this weekend, before he leaves, complete with Halloween costumes, Halloween decorated house, and Halloween party snacks out of this world.

Tip #1: Dress your house in costume

Halloween isn’t just about your costume, but also your home’s “costume” as well. Decorate it to reflect Halloween, too, both inside and outside. And it doesn’t have to be too scary if you’ve got young ones like I do. Thanks to Kmart.com, we were able to snag some awesome non-scary Halloween decorations for our house. Tip #2: Plan Halloween-themed party food

Everyone loves party treats, but make yours especially ghoulish and fun for your Halloween party. You don’t have to be the most creative or artistic, either. Even if you’re a novice chef, these Halloween treats are fun and easy to create.

Tip #3: Get dressed up!

We are some of the few parents you’ll see out there, trick-or-treating with the kids in full costume. We enjoy dressing up as much as the kids do. If you’re going to host a party, go all out! Get dressed up in costume! We enjoy purchasing Halloween costumes that we can wear year-after-year that we can add accessories to, like my husband’s pirate costume. Every year he’ll pick up a better pirate shirt, belt, or hat, or boots to improve his costume.

Tip #4: Don’t forget Halloween-themed activities and music

For some folks, Halloween parties are thrown to take place of going out trick-or-treating. If that’s the case, you can make sure the kids don’t miss out on collecting candy (and control what they get) – you can set up a row of bowls one after the next of different candies, and outfit your children with a Halloween treat bag, and have them walk up to each bowl, filling their bag with one or two candies from each bowl, mimicking trick-or-treating.

You can also involve the kids in some Halloween crafts or let them color on Halloween coloring books.

What about a costume contest? Or face-painting station? Or dance contest? You can’t forget the fun Halloween music, either, like Monster Mash! Or Thriller! Dancing while dressed in costume might be difficult, but fun nonetheless.

Tip #5: Take lots of pictures

You want to remember every last bit of your party, right? Make sure you memorialize it in pictures!
