Best Homemade Lasagna Recipe EVER!
Traditional lasagna recipes call for cooked lasagna noodles that can burn your fingers (if you lay them hot) or stick together (even when you add oil to prevent that). Using no boil oven ready noodles makes it easy peasy!
Another issue with traditional lasagna recipes – layering not only takes a bit, it’s messy and hard to get the layers right so that every bite has everything it needs. My way below makes it effortless! Trust me, you’re in for a REAL surprise here with this recipe!
Homemade Lasagna Recipe
This lasagna recipe is LIFE CHANGING STUFF, friends. Break out the extra special garlic bread or bruschetta and caesar salad for this one. This is one special homemade lasagna your kids will be raving to their friends about. You’re gonna have your kids’ friends’ parents calling you wondering what’s going on.
“Why is my kid wanting your lasagna recipe?” It’s okay. I’m sorry in advance for the barrage of calls, texts, and emails you’re about to get. Send ’em my way, I’ll take care of ’em for you. 😉
Homemade Lasagna Recipe from Scratch
Every bite is perfection. Every bite is meaty, cheesy, has the perfect amount of spice and melts in your mouth. This homemade lasagna tastes EVEN BETTER THE DAY AFTER. So go ahead and make this much. Save it for leftovers. Take it for lunch. Invite a few friends over. You will NOT regret it!
How to Make the Best Lasagna Recipe Ever!
To make this wonderful lasagna recipe, you will need the following:
- No boil oven ready lasagna noodles
- Ground beef
- Ground Italian sausage
- Large jar of tomato sauce
- Minced garlic
- Shredded mozzarella cheese
- Ricotta
- Grated parmesan cheese
- Oregano
- Thyme
- Sage
- Rosemary
- Onion Powder
- Sea Salt
- Ground pepper
You will also need the following items:
- 13×9 baking pan
- Aluminum foil
- Cooking spray
- Colander or two
- 2 good quality wooden spoons
- Rubber spatula
Preheat your oven to 350 degrees. Start by browning both your meats in a skillet on medium high heat. When I brown ground meat, I like using this Pampered Chef Mix ‘n Chop to help get the meat as minced as possible.
Spray your baking pan/s with cooking spray and using a basting brush (or a spoon), spread out a thin layer of sauce on the bottom of the baking pan.
On top of the thinly poured sauce, line your pan with a layer of no boil oven ready lasagna noodles.
Once fully cooked, drain your meat in colanders (I use two to not lose any tiny meat pieces down the drain) and place it in a large bowl.
Now here’s where you’re gonna start looking at me strangely, but it’s all good, friends. Add in your ricotta cheese to the meat in a bowl. “But Lisa, shouldn’t these two things be layered?” Nope! We’re gonna mix ’em all up to ensure every bite has everything it should. It’s okay, follow my lead. I promise you, this’ll be awesome!
Now add in your mozzarella into the cheese/meat mixture in a bowl. Again, don’t question it, it’s gonna be BEAUTIMOUS, friends!
Spice it up with your Italian spices, yo!
From here, add in your grated parmesan. This next part is optional, if you wish, but I found this little special extra ingredient of awesome at the store – a five cheese shredded blend of Italian cheeses. I poured that bad boy into the bowl, too. Yesssss!
Alright, friends. Stay with me here. Now, you’re going to add the tomato sauce to the bowl. I know you’re cringing. I know you’re wincing. “But, Lisa! They are SUPPOSED TO BE LAYERED!” Listen, friends. I promise you, this is just making your life easier and everyone’s life a little better. (Okay, a LOT better.) Have you made a traditional lasagna trying to keep the noodles down will saucing them up, trying to smoosh the ricotta on, layer the seasonings, cheeses, and meats so that everything is covered, and then doing it again and again for the other layers? It’s difficult. This is way easier. You will love me for saving you time!
From here, take a wooden spoon and spatula and mix it, tossing it with both utensils like a salad in a salad bowl, but ensuring all the meat is mixed with all the cheeses. I know it might feel weird to do it this way, but I promise you, its wayyyy worth it.
Once it’s fully mixed, this big ol’ bowl of awesome is what we’ll be working with. Ohhhh, yes please. Come to mama.
And NOW we layer! *toots celebratory horn* G’head, use a wooden spoon and lay that meat cheese mixture onto those noodles. Marvel at how easily and effortlessly you’re able to get this mixture onto the noodles without them popping up, rogue ingredients going in different directions, etc. The meat and cheese together are wonderfully pliable and easy to manipulate onto the noodles.
Moments later, your first layer is complete!
Continue layering twice more (for three layers total). You can add more noodles to the top, but I didn’t, I stopped at the meat/cheese mixture from here.
Now, I top with even MORE mozzarella. (I mean, can you EVER have too much? I don’t think so.)
And then a little seasoning again evenly sprinkled onto the cheese.
I also add a little more grated parmesan on top as well.
Now cover this deliciousness with a sprayed piece of aluminum foil, sprayed side down (obviously). Why spray the foil? So that when the delicious homemade lasagna bubbles while it cooks, it doesn’t stick to the foil. Get it? 🙂 Bake it in the oven for about 30 or so minutes. Listen for the sizzles, the noodles softening, and the bubbling up. Once you feel it’s done, peel back the foil cover and bake to brown it slightly on top for about 5 minutes. THIS is the result of your efforts, friends. WILL YOU JUST LOOK AT THAT?
And when you slice into it, WHOAMG! Look at those perfect layers!

Instructions

- Add in your ricotta cheese, mozzarella, spices, grated parmesan, optional extra Italian cheeses, and tomato sauce into the bowl.
- Mix with two wooden spoons or a wooden spoon and a rubber spatula to mix the ingredients thoroughly until well combined.
- Use a wooden spoon and lay that meat cheese mixture onto the lasagna noodles.
- Add a second layer of lasagna noodles, then an even layer of meat cheese mixture. Repeat a third time.
- Top with more shredded mozzarella, grated parmesan, and seasonings.
- Spray foil before placing on the pan to ensure the lasagna doesn’t stick.
- Bake for 30 or so minutes until the mixture bubbles, the noodles seem cooked through, and the cheese on top is fully melted through and appears to bubble slightly.
- Remove the foil and bake for an additional 5 or so minutes to brown the cheese.
- Carefully slice and serve.
