You know, I menu-plan every week, but because we go grocery shopping on Tuesdays (commissary is closed mondays, and always seems out of stock on Sundays, which used to be our day to shop), we usually do it on Tuesday.
And Tuesday is usually my own special brand of hell, when it rolls around, it’s all about the cutting coupons, printing coupons, coming up with our menu, allinonedaycan’tbreatheuntilit’sdone kind of thing. Why I never thought to plan it in advance is beyond me.
And week after week I see Kate, Toni and many others using Menu Plan Monday, where I’ve gone many-a-time to get some great ideas for dinners when I’m stuck. So in an effort to not be an idiot and make sense for once 😉 I thought I might try it this week.
So here goes.. our menu for this week:
Monday
- eggs
- leftovers (pizza & sloppy joes)
- homemade burgers & dogs, fries, corn on the cob
Tuesday
- pancakes
- chicken nuggets
- Italian Crockpot Chicken with homemade biscuits
Wednesday
- bagels
- grilled cheese
- enchiladas
Thursday
- sausage rolls
- hot dog macaroni & cheese casserole (cut up hot dogs, mac & cheese, vegetables all stirred into one dish)
- chicken pot pie adding in potatoes with a classic crisco crust
Friday
- pumpkin bread
- ravioli
- homemade pizza night with dough made from breadsticks recipe
Saturday – Valentine’s Day and first day of soccer games 🙂
- french toast
- hamburgers & hot dogs
- steak
- chocolate pie for dessert. OMGYUMISITSATURDAYYET?
Sunday
- omelets ala hubby
- leftovers
- roast chicken w/ homemade gravy, stirred potatoes, green beans
Monday
- waffles
- chicken nuggets
- cheesy pasta casserole with breadsticks (hopefully that don’t suck lol)
Tuesday
- eggs
- leftovers
- pork wontons, rice, chinese vegetables
Now, this looks like a mountain of food, but often times we have so many leftovers we do leftovers for many more than you see here, which pushes meals into next week’s plan. There are actually 2 breakfasts, 3 lunches and 3 dinners that were planned from this past week that have now been brought into this week, simply by spreading out the leftover love. I stockpile pancakes, waffles and french toast for the next day or two to make our morning rush easier. My pumpkin bread recipe makes 3 loaves, which get devoured day after day, non stop, so that’ll push everything else off.
