Incredibly easy, actually! Within 30-45 or so minutes you’ll have dinner ready and done!
Ingredients to Make Beef Totchos
To make this Easy Beef Totchos recipe, you will need the following ingredients:
- Tater tots
- Ground beef
- Taco seasoning
- Shredded cheese
- Taco/nacho toppings (such as guac, sour cream, salsa, queso, onions, peppers, jalapeños, etc)
Kitchen Tools Needed to Make Beef Totchos
To make this recipe, you will need the following tools:
- Baking sheets or pizza/baking stones
- Cooking spray
- Large skillet
- Spatulas (both rubber and flat)
How to Make Beef Totchos (Tater Tot Nachos)
Preheat your oven to the package directions for your tater tots. Cut open your bag/s of tater tots and start lining them up on your baking sheets or stones. You’ll want to line up your tater tots end to end to be able to fill every space available on your baking sheets or stones.
Bake your tater tots according to the manufacturer’s directions on the bag, but subtract 10 minutes from the cook time (because they’ll be baking with the meat and cheese and we don’t want the tater tots to be overdone).
While the tater tots are cooking, brown your ground beef on the stove with a large skillet and rubber spatula. Cook the meat until cooked thoroughly, drain, and then prepare with your desired taco seasoning according to the package directions.
Once tater tots are finished, take them out of the oven and set on the stove or counter top. They will be browned, somewhat crisp, but still a little soft (and most importantly able to be cooked further without burning).
Gently start adding the taco meat to the tops of the tater tots using your rubber spatula (you can also opt to use a slotted spoon).
Begin with a little at a time to ensure you coat the tater tots evenly. You also want to be gentle as to not smoosh or smash the tots by pressing too hard.
Be sure to cover the tots entirely with meat. You can use the end of your rubber spatula to ensure it is evenly placed. Ideally you want every crack and crevice coated (holy alliteration, Batman!) with the taco meat to ensure every bite is meaty. You might not use all of your taco meat (in which case, score! Leftover taco meat for later, dude).
Here comes the funnest part – coating it completely and totally with shredded cheese. Go ahead and smother it!
With the tots mostly done, the beef already cooked thoroughly, all we’re doing here is crisping up the tots and melting the cheese to make it all become one. This is the magical part, friends. Let’s pop these baking sheets/stones back into the oven for at least ten minutes if not more.
The cheese should be thoroughly melted and ooey-gooey and definitive sizzling happening. It’s go time, friends!
Grab a flat spatula to serve!
You can wait a few minutes for it to cool or you can serve it right away, your choice!
Be sure to serve it with your favorite taco and nacho toppings, such as onions, peppers, salsa, guacamole, queso, sour cream, jalapeños, and more!
